Work and Life Experience

 

1992-1994 

Worked as Chef for the Italian Cooks Federation and for Conte Dona’ Delle Rose restaurant at Porto Rotondo, Costa Smeralda.

1995-2009  

Successfully opened two gelato shops. One at the Bondi Beach Pavilion and second one on Norton St Leichhardt, always featured in the Good Food Guides since opened.

1999

Gained HACCP and GMP training certificate

1997-2011

I published a Youth magazine called “SonoSiamo” which was aimed at developing and orienting youth of ethnic backgrounds towards social and cultural issues. This work can be found at it.wikipedia.org/wiki/Stampa_di_lingua_italiana                                                                  

1997-2001

Between these periods I was a founding member and coordinator of the Italian-Australian Youth Association (IAYA). In 2001 this work led to the publishing of a book titled “Double Identity” which deals with the experiences and feelings of youth of ethnic background in Australia.

2000-2004 

“SENIOR CAKE COMPETITION” developed on behalf of Leichhardt Council and aimed at Seniors Week with the objective to entertain seniors and give an opportunity to students in the hospitality sector to become familiar with specific diets and how to judge traditional pastry from various nationalities.

2000-2002

Aboriginal Projects through TRANBY COLLEGE, Glebe. My role here was to develop and expand links between the Aboriginal people and the European market.

• Contacts were established with the Italian Chamber of Commerce in Sydney

• I provided consultancy for the first Aboriginal Fashion Parade supported by the NSW Sate and Regional Development (NSWDSRD) which participated in the Milano Expos in Italy, 2001.

• As owner of the brand “Boomeralia” I sponsored the 2001 Aboriginal fashion parade in Sydney

• I introduced cooking courses at any level with specializations targeted at the consumption of products cultivated or manufactured by Aborigines, even with the support of TAFE.

• Create cultural exchange by introducing courses in the indigenous Australian language, culture, art and music, with indigenous Australian lecturers, in the Italian Universities and reciprocating the initiative with the Australian Universities (still in process).

• During the 2000 Olympic Games held in Sydney I was able to introduce the international press to the TRANBY College where the Director, Ivonne Jackson had the possibility to explain the work done by the College in support of the Aboriginal people.

2001

Workshop for East Timor - in partnership with Leichhardt Council Mayor, Marie Sheehan I established a fundraising event, The funds went towards the refurbishment of the library in Maliana, a town located west of Dili. I provided free consultation on how potential business activities could be established in East Timor by using native bush food and help them Identify the products and services that may have an export market like coffee and vanilla which I advertised on an Italian magazine.

2002  

Voluntary work in the Philippines -  In 2002 I went to Cebu to help a small Gelato maker develop its business on behalf of Aust-aid by providing consultation on the use of base products, craftsmanship and a plan on how to promote the final product. The promotional work was aimed at involving the community people in participating to sports events around the product, carrying out charity work and introducing the product to various other small businesses all in all culminating to the organization of the launch at the Shangrila Resort which was attended by the Minister for Tourism and Hospitality and other Cebuan Authorities on my request.

2009  

In April 2009 I organized an event called Good, Clean and Fair Food Expo on behalf of Leichhardt Council and supported by the Edmund Rice Centre for Fair Trade aimed not only at showcasing the principles of Slow Food & Fair Trade to the Leichhardt community but to help Leichhardt Council become a Fair Trade Council.  The event was attended by the President of Slow Food NSW, the Leichhardt Mayor, Director of the Edmund Rice Centre and food critic and writer John Newton

2009 

As part of the Sydney Italian Festival 2009 I proposed an event called “Gattopardo Day” which was supported by the Italian Consulate General, The Italian Institute of Culture and held at Government House NSW. The event aimed at reliving the historical period of the 1860’s in Sicily, Italy, by capturing moments of the lifestyle  of the Sicilian aristocracy in its last years of decline. I not only organized the event but also prepared the culinary delights of those days together with a team of chefs whilst guests dressed in costumes of that era danced to the classical music of Giuseppe Verdi played by SBS Youth Orchestra. www.gattopardoday.net

2010 

Edmund Rice Centre. I organised a Fundraising event for the victims of the Landslide in Messina to raise money to fund projects for the families which were mostly affected by the landslide and give a message from the Federal Minister Anthony Albanese to the Mayor Messina City. ... From the age of 6 I helped my father Salvatore De Luca, making and selling gelato and sweets,through the streets of Messina, Sicily from his "carrettino siciliano" and the rest is history. I was born in Messina, Italy in 1958 and lived 14 years in Olbia, Sardinia.

 

In 1985, My wife and I started our own Gelateria in Olbia, Sardinia. Fascinated by the Australian continent where from time to time I travelled for work reasons, I decided to make Australia my home in 1992. In 1994 we opened up our store on Norton St Leichhardt, later opening on Bondi Beach in 2001 - 2005.

 

During this time, we produced many various types of well known for flavours such as Rose Petals, vegemite, viagra, cucumber, and Corned Beef. Because of our quirkey selection of flavours and the Artisan method of the production of gelato, we had a lot of media exposure from all Australian TV channels as well as TV Asahi, Duetche Welle and NBC as well print media on local, national and international scale.

 

My work has involved doing a variety of jobs from teaching to consultancy and project development. As a consultant and business owner I have been successful in opening coffee bars and stores in Noosa, Jakarta, Dakar, Japan and here in Sydney.  

 

As a teacher I have taught in the hospitality sector and in project development I have worked with Charities and Non-profit organizations.  

One of my greatest achievements is when the then Prime Minister, John Howard recognised my contribution in the development of poor countries in South East Asia.  

Since July 2009, I retired from my independent business to dedicate more time to social needs.      

I have great respect of cultures and for traditional cuisine and individuals.
